- For the chicken:
2 Ibs chicken breast or thighs, cut into chunks
1 cup pineapple chunks (fresh or canned)
1 red bell pepper, chopped
1 yellow bell pepper, chopped
Wooden or metal skewers
- For the marinade:
½ cup BBQ sauce
½ cup pineapple juice
2 tbsp honey
1 tbsp soy sauce
1 tbsp brown sugar
1 tsp smoked paprika
1 tsp garlic powder
½ tsp chili flakes (or more for heat)
Salt & pepper to taste
Directions
- Make the marinade
- Whisk BBQ sauce, pineapple juice, honey, soy sauce, brown sugar, paprika, garlic powder, chili flakes, salt, and pepper.
- Marinate the chicken, add chicken to bowl or bag.
- Pour marinade over top.
- Refrigerate at least 1 hour, or up to 8.
- Assemble skewers
- Thread chicken → pineapple → peppers → repeat.
- Cook options:
- Grill (best flavor)
- Grill on medium-high 10–12 minutes
- Brush with extra marinade while cooking
- Rotate until charred and cooked through
- Oven
- Preheat to 425°F
- Place skewers on a lined baking sheet
- Bake 18–20 minutes
- Broil the last 2 minutes for caramelization
- Air Fryer
- 390°F for 12–14 minutes
- Shake halfway through
- Serve
- Over rice, with cilantro, or with extra pineapple BBQ sauce on the side.
Notes
- Kousin Tip: Mix 2 tbsp BBQ sauce + 1 tbsp pineapple juice for a sticky finishing glaze.
