4 Catfish fillets
1 cup cornmeal
1/2 cup flour
2 tsp Cajun seasoning
Salt and pepper to taste
1 cup buttermilk
Vegetable oil for frying
Directions
- Soak catfish fillets in buttermilk for 20–30 minutes.
- Mix cornmeal, flour,
- Dredge fillets and fry in hot oil until golden brown (3-4 min per side).
- Drain on paper towels and serve with tartar sauce and lemon wedges.
Notes
- For extra flavor that sticks to the fish and not the pan, dip your catfish in seasoned cornmeal and a splash of hot sauce before frying. The hot sauce acts like a glue, gives the crust a little kick, and makes the outside extra crispy without overpowering the fish.
